The BISTRO reinterprets the Aosta Valley and italian comfort food with the right respect for tradition. The ingredients selected for the recipes are cared for and sought after among
small, high-quality artisan productions, such as the cheeses selected by Erba Voglio from Aosta and Borgo Affinatori from Asti, the flours chosen are a Slow Food presidium of De Tacchi with its Biancoperla di Mais, like all leavened products and pastas, are produced by our leavening laboratory, followed by our executive chef, the trout come from the Aosta Valley farms, the meats we select are used in all their cuts with maturation chosen by us.
